Veggie Tacos

Veggie Tacos

Veggie tacos are a go-to meal for me because it's so simple and so delicious. You can make them with pretty much any veggies that you have in your home, so it's a great way to use up what you have in your fridge. This version uses carrot, broccoli, and mushroom, but feel free to mix up the veggies when making your own.

Olive oil spray
one carrot
four mushrooms
half head of broccoli
cumin
corn tortillas
salsa
cheddar cheese


Peel the outer layer of the carrot and grate. Chop broccoli into small pieces and dice mushrooms. On medium-low heat, spray olive oil spray on pan and add veggies. Sprinkle cumin and add salt and pepper. Let cook for 10-15 minutes, stirring occasionally. Once cooked, remove veggies into bowl. Increase to medium heat. Re-spray pan with olive oil. One by one, place corn tortillas on pan to heat, adding a few sprays in between each tortilla.

To assemble, add veggies and salsa to each taco, and sprinkle with cheese.
